Coupland, in Microserfs, was right when he noted that the fish used in Filet-o-Fish sandwiches is perfectly tasteless, and that McDonald's wants it that way so it can have a featureless palette onto which anything (taste, texture, colour) can be projected.

My brief and perfunctory Google search hasn't turned up anything decisive on what fish actually go into Canadian Filet-o-Fish sandwiches, which is disturbing.
